Cale’s Crepes

Growing up my Mum would always make French Crepes for us on the weekend! Usually Sunday mornings. I have such fond and amazing memories of eating these with my family. They really are divine and you can use toppings or fillings to make them sweet or savoury. My Dad and I love having crepes with lemon juice, sugar and cinnamon or cinnamon sugar (if we are being naughty haha). To this day, we all still make crepes and prefer them instead of pancakes. I will never be able to make them as delicious and crispy as my Mums, it must be her induction cooktop or something haha!

Serves 4.

Ingredients:

  • 350 grams white flour (approx 2 cups)

  • 2 eggs

  • 770 grams cows milk (approx 3 cups)

  • 1 pinch of salt

  • Butter for frying

1. Add all ingredients to your Thermomix and blend for 30 seconds, speed 9 to make the batter. Pour into a bowl.

2. Use a large frying pan to make the crepes. Use 1 small portion of butter and spread around pan before you cook each crepe.

3. Pour 1/2 cup crepe batter onto the top edge of the pan and then twist pan around to spread batter evenly. Cook on medium to high heat until lightly brown on one side.

4. Flip and repeat on other side. They usually cook very quickly so keep checking the crepes.

5. Flip crepe onto a plate to make a pile and repeat process. Bon appétit!

We use Made By Cow milk which is raw cold pressed cows milk. It's a little bit more expensive but it's so delicious, creamy and straight from the farm. Plus we love knowing that we are supporting local diary farmers who care about their cows. It can be found in IGA's or independent fruit/veg shops or health food stores.

If you prefer a runnier batter, just add in a bit more milk :)
