Simple Smoky Pumpkin & Sweet Potato Soup

Matt created this recipe in 2019 and it’s a yummy, easy soup. Perfect for those cold winter days and nights. We love being able to throw everything in our Thermomix, cook the soup hands free while we go do other things and then when it’s ready, blend it all up and then we have a beautiful, delicious and nutritious homemade soup!

Serves 4.

Ingredients:

• 1 onion, halved.

• 2 garlic cloves

• 150 grams bacon (optional)

• 150 grams carrot (cut into pieces)

• 30 grams extra virgin olive oil

• 1 tsp dried chilli flakes (optional)

• 1 tsp smoked paprika

• 1 tsp ground cumin

• Half a Kent pumpkin cut into small pieces

• 3 potatoes, cut into small pieces

• 1 tbsp vegetable stock paste

• 500 grams of water

• 50 grams cream (optional or can use coconut cream for dairy free)

1. Put onion, garlic, bacon & carrots into the Thermomix. Chop 6 seconds, speed 5. Scrape down the sides of the bowl.

2. Put olive oil, chilli flakes (if you like a kick), smoked paprika & cumin into the bowl. Sauté 5 minutes, Varoma temperature, speed 1 (MC off). Scrape down sides of bowl.

3. Put pumpkin, potatoes, vegetable stock & water into the bowl. Cook for 25 minutes, 100 degrees, speed 1 (simmering basket on top to avoid splatter).

4. Pour cream into the Thermomix & cook for 3 minutes, 100 degrees, speed 1.

5. Serve immediately and garnish with fresh herbs. Coriander or parsley goes well with this soup.

Tip: For a vegan option, you can substitute the cream with coconut cream and use facon instead of bacon or leave out the bacon altogether. If you like a smoother consistency, after step 4 blend for 30 seconds on speed 8.
