Corn Flake Crunch Cookies

Corn Flakes remind us both of being a kid and eating a delicious bowl of Cork Flakes for breaky. I am pretty sure I used to sprinkle sugar into my cereal, so bad haha. Now if I need a little sweetness I drizzle some local honey on it. So good. Anyway, these cookies are bloody brilliant and we are sure you’ll love them too. There is very little effort involved to make this goodies. Ready as quick as a flash!

Makes 10.

Ingredients:

  • 100 grams coconut oil

  • 60 grams coconut sugar

  • 1 egg

  • 150 grams plain white flour

  • 1.5 tsp baking powder

  • 70 grams of corn flakes

  • 50 grams sultanas

1. Preheat oven to 160 degrees (fan forced)

2. Mix coconut oil & coconut sugar in TM 5 seconds, speed 4.

3. Place egg, flour, baking powder in & mix 30 seconds, speed 5.

4. Pour 40 grams of cornflakes & all sultanas in. Mix 10 seconds, speed 5.

5. Hand crush the remaining 30 grams of cornflakes onto a flat plate and shape cookie mixture into disc shape (approx 6-7cm in your palm) and flaten slightly, pushing into the cornflakes on both sides to create a crunchy texture on the outer layers.

6. Place on baking tray (on silicone mats or baking paper) and bake 15 minutes (or until golden brown around edges).

7. Let cool for 10 minutes and enjoy!

Stores well in glass jar for a couple of days. You can substitute the sultanas for your choice of extra (you could try raisins, white chocolate etc!). Coconut oil and coconut sugar are healthier alternatives to butter and white sugar, so these cookies are a great snack for kids (and adults!).
