Blueberry Chia Puddings

Chia Puddings are such a yummy and healthy breakfast. Really good during warm weather! It’s super creamy, not too sweet and keeps you full due to the chia seeds. You can prepare these the night before and then when you wake up you feel so organised and like a domestic goddess as you literally just get it from the fridge and there’s your great start to the day.

Serves 4.

Ingredients:

  • 125 grams fresh blueberries

  • 30 grams maple syrup

  • 400 grams coconut milk

  • 75 grams chia seeds

  • 1 tsp hemp seeds (optional)

1. Mix blueberries & maple syrup in TM bowl 10 seconds, speed 9. MC on. Scrape down sides.

2. Add remaining ingredients (coconut milk, chia seeds, hemp seeds if using) and mix 10 seconds, Reverse, speed 4.

3. Divide mixture into 4 glasses (or ramekins), cover and place in fridge to set overnight.

4. Enjoy with any toppings you like! Examples, nuts, goji berries, more berries or fruit, shredded coconut etc.

Tip: Hemp seeds are a great source of plant-based protein and provide an ideal balance of essential omega-6 and omega-3. They have a nutty taste (a cross between a sunflower seed and a pine nut) but are optional in this recipe, they taste good either way. I blitzed 125 grams blueberries (2 sec, speed 9) and poured on top of one of the chia puddings, and added some shredded coconut. The other was topped with fresh blueberries.
