The Dip of all dips

This Dip is famous!! It’s actually the best dip ever and that’s why we named it The Dip of all dips. My family always makes this for special occasions and events. People always ask for the recipe and absolutely fall in love when they try it. Even Tenina has shared it on her website (thanks Tenina!). This dip is wickedly good and I am sure you will love it as much as we do.

Serves 6.

Ingredients:

  • 1 packet of plain rice crackers (we use Sakata)

  • 1 block of cream cheese (250 grams)

  • 140 grams brown sugar (1 cup)

  • 115 grams white vinegar (1/2 cup)

  • 2 small cans of diced capsicum, Edgell Bra (each can is 125 grams, do not drain the liquid in the cans as it’s needed for the recipe)

1. Add sugar, vinegar and both cans of capsicum (including liquid in cans) into Thermomix bowl. Cook for 40 minutes, varoma (steaming temperature), reverse, speed 1, MC off and put your steaming basket on top of the Thermomix lid.

2. When complete, leave in TM bowl for 1-2 minutes while plating the cream cheese block.

3. Spoon out contents evenly on top of cream cheese block (it will run down sides also).

4. Serve with rice crackers. Enjoy :)

Tip: Edgell brand Australian Diced Capsicum Canned Vegetables (125 grams) can be found in the canned vegetable aisle in most Woolworths, Coles and IGA's. Please retain the liquid in the diced capsicum tins as you need this for the recipe.

This dip is best served straight away while warm as when the dip sauce cools down, it becomes hard and toffee like. Serve with rice crackers or crackers of your choice.

When eating, you may find it easier to use a cheese knife. We normally have this dip with family/when entertaining, so if you have kids, they will get very sticky fingers! We warned you haha.
