Orange Nut Cookies

Orange you glad we’re here to give you a new cookie recipe!? Oranges are so cheap at the moment and our neighbour dropped off a bag from his orange tree the other day so we had to create a recipe to use them. These cookies are a healthier alternative to your every day choc-chip ones but are equally as tasty, if we do say so ourselves.

Read below to follow our recipe and let us know what you think 😄 You can also substitute the nuts for your preferred choice or whatever’s in the pantry.

Makes 18-20 cookies

Ingredients

  • 2 orange zest/rind (approx 6g)

  • 120g cashews

  • 70g pecans

  • 40g walnuts

  • 60g honey

  • 50g rolled oats

  • 40g maple syrup

  • 50g coconut oil (melted)

  • 20g orange juice

  • 20g wholemeal flour

  • 1 tsp vanilla extract

  • 1/2 tsp bicarb soda

Instructions (MC/lid stays in for each step)

  1. Preheat oven to 160 degrees fan forced & line 2 large baking trays.

  2. Add orange zest/rind into TM bowl & blitz 10 seconds, speed 9. Scrape down and repeat.

  3. Add all nuts (cashews, pecans, walnuts) into TM bowl & mill 8 seconds, speed 8. Scrape down sides.

  4. Add remaining ingredients and mix 15 seconds, speed 5. Place TM bowl with batter in fridge for 15 minutes to harden.

  5. Take MC out of fridge and roll heaped tsp into balls & place on baking tray (aim for 18 cookies). Press with palm slightly to flatten.

  6. Bake 12-15 minutes on 160 degrees until golden. Transfer to wire rack to cool. Enjoy 😊
