Spiced Orange Scones

These scones are the perfect snack for morning or afternoon tea! We were lucky enough to be contacted by Ceres Organics AU and they sent us a box of goodies so we converted this delicious scone recipe to Thermomix and it’s awesome. They are a different take on your traditional scones and healthier too.

Makes 12-14 scones.

Ingredients:

  • 1 orange (zest only)

  • 150 grams pitted dates

  • 350 grams of white spelt flour

  • 1 tbsp baking powder

  • 1 tsp ground cardamom

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 120 grams coconut oil

  • 40 grams coconut sugar + a bit extra for brushing

  • 150 grams almond or oat milk + a bit extra for brushing

  • 1 tsp vanilla extract

Instructions:

  1. Line a baking tray with baking paper or a silicone baking mat.

  2. Preheat the oven to 180 degrees fan forced.

  3. Add the zest from the orange to the TM bowl and mill for 10 seconds, speed 9. Set aside in a bowl.

  4. Add 150 grams pitted dates to the TM bowl and chop for 5 seconds, speed 7. Set aside in the same bowl as the orange zest.

  5. Clean and rinse the mixing bowl.

  6. Add the white spelt flour, baking powder, ground cardamom, ground cinnamon and salt to the TM bowl. Mix 10 seconds, speed 4.

  7. Add the coconut oil to the bowl and mix 15 seconds, speed 4.

  8. Add the coconut sugar and mix 6 seconds, speed 4.

  9. Add the almond or oat milk, vanilla extract, orange zest and pitted dates to the TM bowl and knead for 1 minute using the dough function.

  10. Turn out the dough onto a floured surface/silicone mat and gently knead into a ball and then shape it out into a circle or oval shape about 1 cm thick.

  11. Using a dough cutter, cookie cutter or glass, cut into scone shapes (circles or triangles). Put the scones on the lined baking tray.

  12. Mix a bit of almond or oat milk with some coconut sugar and brush the scones with this mixture and bake for 15-18 minutes until golden brown.

  13. Remove from the oven when they are ready and let them cool on a cooling rack. Serve with butter, cream and jam.
